This is, of course, the reason I use them exclusively in my low FODMAP recipes. But they’re on the pricey side so I set out to find a less expensive alternative. Dried oyster mushrooms turn out to be a great alternative. Just one ounce of dried oyster mushrooms can remarkably replace eight ounces of fresh mushrooms in your recipes.
